  • 2 large chicken breasts or 4 thighs (about 1.5 lbs / 700g), or 2 cups shredded rotisserie chicken
  • 810 strips thick-cut bacon
  • 3 cups (300g) shredded cheese blend (Cheddar, Monterey Jack, and/or Pepper Jack)
  • 8 large flour tortillas (10-inch)
  • 2 tablespoons dry ranch seasoning mix
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter or oil
  • Salt and pepper to taste
  • Optional: 2 stalks green onions (sliced), 1 small jalapeño (sliced), sour cream, salsa

Instructions

  1. Cook and prep the chicken: If using raw chicken, season with salt and pepper. Pan-sear in oil over medium-high heat for 5-6 minutes per side until golden and cooked through (165°F). Let rest for 5 minutes, then shred with two forks. If using rotisserie chicken, simply shred it.
  2. Mix the ranch chicken: In a medium bowl, combine the shredded chicken, mayonnaise, and dry ranch seasoning. Stir until evenly coated.
  3. Cook the bacon: Cook bacon in a skillet over medium heat until crisp. Drain on paper towels and crumble into bite-sized pieces. Reserve a teaspoon of bacon grease if desired.
  4. Assemble the quesadillas: Heat a large skillet over medium heat with butter or oil. Place one tortilla in the pan. Sprinkle cheese on half, add a generous scoop of the ranch chicken mixture, sprinkle crumbled bacon, and top with another layer of cheese. Fold the empty half over the filling.
  5. Fry until golden: Cook for 2-3 minutes until the bottom is golden brown and crispy. Carefully flip and cook the other side for 2-3 minutes until golden and cheese is melted. If needed, cover with a lid for a minute to help melting.
  6. Repeat and serve: Repeat with remaining tortillas. Slice each quesadilla into 6 wedges with a pizza cutter. Serve immediately with sour cream, salsa, or extra ranch dressing.

Notes

Shred your own cheese for better melting. Use medium heat to prevent burning the tortilla before the cheese melts. Do not overfill the tortilla to prevent falling apart. For leftovers, reheat in a skillet or air fryer to maintain crispiness. Can be frozen uncooked for up to 2 months.
