Crispy Baked Honey Garlic Chicken Thighs

  • Author: Olivia
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

A foolproof, 20-minute weeknight dinner featuring juicy chicken thighs coated in cornstarch for crispiness and glazed with a sticky, sweet, and savory honey garlic sauce.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons cornstarch
  • 1/3 cup honey
  • 6 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Pat chicken thighs completely dry with paper towels to ensure crispiness.
  3. Place dried chicken in a large bowl, sprinkle with cornstarch, and toss until lightly coated.
  4. Arrange chicken in a single layer on the baking sheets, ensuring pieces do not touch.
  5. Bake chicken for 12-15 minutes until dry and slightly firm.
  6. While chicken bakes, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, and red pepper flakes in a small bowl.
  7. Heat the sauce in the microwave for 30-45 seconds until warm and runny.
  8. Remove chicken from oven. Brush half the sauce over the chicken, flip pieces, and brush with remaining sauce.
  9. Return to oven and bake for another 5-7 minutes until sauce caramelizes and chicken reaches 165°F internal temperature.
  10. Remove from oven and let rest for 2 minutes.
  11. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

Patting the chicken dry is crucial for crispiness. Do not crowd the pan; use two sheets or bake in batches to avoid steaming. For extra crispy results, brush with sauce, bake, brush again, and bake for 2 more minutes. This recipe does not freeze well as the coating becomes soggy upon thawing.
