  • 1.5 lbs boneless, skinless chicken thighs or breasts (or 1 rotisserie chicken, shredded)
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), rinsed and drained
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 can (4 oz) mild diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup frozen corn (optional)

Instructions

  1. Prep ingredients: Chop onion, mince garlic, and measure spices. If using raw chicken, cook and shred it now. Set aside.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  3. Add minced garlic and cook for 1 minute, stirring constantly, until fragrant but not browned.
  4. Add cumin and oregano to the pot. Stir for 30 seconds to toast the spices.
  5. Pour in chicken broth, scraping up any brown bits from the bottom of the pot.
  6. Add rinsed white beans, shredded chicken, green chiles (including liquid), and frozen corn (if using). Stir to combine.
  7. Bring the mixture to a gentle simmer and cook for 5 minutes to meld flavors.
  8. Reduce heat to low. Pour in heavy cream and stir well. Simmer for another 2 minutes until slightly thickened.
  9. Taste and adjust seasoning with salt and pepper.
  10. Serve hot, topped with diced avocado, fresh cilantro, and lime wedges.

Notes

Do not boil the cream after adding it to prevent separation. Rinse beans thoroughly to remove starchy liquid. Using a rotisserie chicken saves significant cooking time. This recipe freezes well for up to 3 months.
