A rich, indulgent, and restaurant-quality one-pan dinner featuring seared chicken breasts in a velvety garlic cream sauce with sun-dried tomatoes and spinach. Ready in under 30 minutes.

- 1.5 lbs (680g) boneless, skinless chicken breasts
- 4–5 cloves garlic, minced
- ½ cup (75g) sun-dried tomatoes, chopped (packed in oil)
- 1 cup (240ml) heavy cream
- ½ cup (120ml) low-sodium chicken broth
- 2 cups (60g) fresh baby spinach
- ½ cup (50g) freshly grated parmesan cheese
- 1 tablespoon Italian seasoning
- 2 tablespoons olive oil (or oil from sun-dried tomatoes)
- 2 tablespoons unsalted butter
- Salt and black pepper to taste
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Pound to even thickness if necessary.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove to a plate and tent with foil.
- Reduce heat to medium. Add remaining olive oil and butter to the skillet. Once melted, add minced garlic and cook for 30-60 seconds until fragrant.
- Add chopped sun-dried tomatoes and Italian seasoning; cook for 1 minute.
- Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1-2 minutes.
- Stir in heavy cream and bring to a gentle simmer.
- Add parmesan cheese and stir until melted. Add spinach and cook until wilted (1-2 minutes).
- Return chicken to the skillet, spooning sauce over the top. Heat through for 1-2 minutes until chicken reaches 165°F (74°C).
- Serve immediately over pasta, zucchini noodles, or mashed potatoes.
Notes
Do not use jarred garlic as it has a metallic taste. Use freshly grated parmesan for smooth melting. Save the oil from the sun-dried tomatoes for extra flavor. Do not boil the cream vigorously to prevent separation. This dish does not freeze well due to the dairy sauce.
