- 1 cup (240g) pure pumpkin puree
- 2 cups (480ml) whole milk (or oat milk for dairy-free)
- 2 large cinnamon sticks (or 1 tsp ground cinnamon)
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp ground ginger (or 1 inch fresh ginger)
- 1/3 cup (80ml) maple syrup
- 1/2 cup water
- 1 shot (30ml) espresso or strong brewed coffee
- Whipped cream (optional, for topping)
- Pinch of cinnamon (for garnish)
Instructions
- In a small saucepan, combine pumpkin puree, maple syrup, 1/2 cup water, cinnamon sticks, nutmeg, and ginger. Whisk until smooth.
- Place the saucepan over medium heat and bring to a gentle simmer. Reduce heat to low and simmer for 10 minutes, stirring occasionally, until fragrant and slightly thickened.
- Remove from heat, discard cinnamon sticks, and let the syrup cool completely to allow flavors to meld.
- While the syrup cools, brew one shot of espresso or 30ml of strong coffee and pour into a mug.
- Heat the milk in a saucepan over medium-low heat until steaming hot (around 150°F/65°C), but do not boil.
- Froth the milk using a handheld frother or by shaking it vigorously in a lidded jar for 30 seconds.
- Stir the cooled syrup and add 2-3 tablespoons to the mug with the coffee. Stir to combine.
- Pour the hot milk over the coffee mixture, allowing foam to rise to the top.
- Top with whipped cream and a pinch of cinnamon if desired. Serve immediately.
Notes
Do not skip the cooling step for the syrup; it allows flavors to deepen. Pumpkin puree must be whisked thoroughly to avoid lumps. The syrup can be made ahead and stored in the fridge for up to two weeks or frozen for up to three months. Do not freeze the assembled latte as the milk will separate.
