  • 2 large eggs, room temperature

  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups (270g) old-fashioned rolled oats
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg, freshly grated
  • 1 ½ cups (150g) raisins, soaked in hot water and drained
  • ½ cup toasted pecans, chopped (optional)

Instructions

  1. Soak raisins in hot water for 10 minutes, then drain and pat dry thoroughly.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  3. In a large bowl, beat softened butter, brown sugar, and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract until just combined.
  5. Reduce mixer speed to low and gradually add dry ingredients, mixing until just combined.
  6. Fold in oats and drained raisins (and pecans if using) with a spatula.
  7. Chill dough for at least 30 minutes (optional but recommended).
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop dough into 2-tablespoon balls and place 2 inches apart on sheets.
  10. Bake for 10-12 minutes until edges are golden but centers look soft.
  11. Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Soaking raisins prevents them from absorbing moisture from the dough. Chilling the dough prevents excessive spreading and improves texture. Butter should be softened, not melted. Cookies continue to cook on the hot pan after removal from the oven.
