  • 2 teaspoons vanilla extract
  • 3 large eggs, room temperature
  • ½ cup full-fat sour cream
  • 1 cup caramel sauce
  • 1 cup pecan halves, toasted
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil (for melting chocolate)
  • Sea salt flakes (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, sugar, and salt until resembling wet sand.
  3. Press mixture firmly into the bottom of a greased 9×13-inch baking dish.
  4. Bake crust for 8-10 minutes until lightly golden, then let cool.
  5. In a large bowl, beat softened cream cheese until smooth and creamy.
  6. Add sugar and vanilla extract; beat until combined.
  7. Add sour cream and mix again.
  8. Add eggs one at a time on low speed, mixing just until incorporated. Do not overmix.
  9. Pour batter over cooled crust and spread evenly.
  10. Drizzle caramel sauce over the top and swirl gently with a knife or skewer.
  11. Sprinkle toasted pecans evenly over the top.
  12. Bake for 35-40 minutes until edges are set but center has a slight jiggle.
  13. Turn off oven, crack door open, and let cheesecake cool in oven for 1 hour.
  14. Cool completely to room temperature.
  15. Melt chocolate chips with coconut oil in microwave or double boiler until smooth.
  16. Drizzle melted chocolate over cooled bars.
  17. Sprinkle with sea salt flakes if desired.
  18. Refrigerate for at least 4 hours or overnight until set.
  19. Lift out using parchment paper and cut into squares.
