  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1.5 teaspoons cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 3 large bell peppers (mixed colors), sliced into strips
  • 1 large yellow onion, sliced
  • 12 limes, juiced
  • 0.5 cup fresh cilantro, chopped
  • Tortillas (flour or corn) for serving
  • Optional toppings: sour cream, shredded cheese, salsa

Instructions

  1. Slice chicken breasts into uniform strips and toss with garlic powder, onion powder, cumin, chili powder, smoked paprika, salt, and pepper.
  2. Heat a large skillet or cast iron pan over medium-high heat with olive oil until shimmering.
  3. Sear chicken strips in a single layer (cook in batches if necessary) for 2-3 minutes per side until browned and cooked through. Remove to a plate.
  4. In the same skillet, sauté bell peppers and onions with a pinch of salt for 5-7 minutes until tender and slightly charred.
  5. Return chicken to the skillet with the vegetables and toss to combine. Heat through for 1 minute.
  6. Remove from heat and squeeze fresh lime juice over the mixture. Sprinkle with chopped cilantro and toss once more.
  7. Serve immediately with warm tortillas and desired toppings.

Notes

Do not crowd the pan when searing chicken to ensure a good crust rather than steaming. Keep heat on medium-high for the best char on peppers. Tortillas should be warmed before serving to prevent cracking. Leftovers keep well in the fridge for up to 4 days.
