Ingredients
- 1 cup (226g) unsalted butter, softened to room temperature
- ½ cup (100g) granulated sugar
- 1 cup (200g) light brown sugar, packed
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 2 ½ cups (312g) all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- 1 teaspoon fine sea salt
- 2 cups (340g) white chocolate chips
- 1 cup (115g) macadamia nuts, roughly chopped
- Flaky sea salt, for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat on medium speed until just combined, scraping down the sides of the bowl.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients on low speed, mixing only until the flour disappears. Do not overmix.
- Using a silicone spatula, gently fold in the white chocolate chips and chopped macadamia nuts until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-14 minutes, or until the edges are golden brown but the centers still look soft and slightly undercooked.
- Let the cookies cool on the baking sheet for 5 minutes to set their structure, then transfer to a cooling rack to cool completely.
- Sprinkle with flaky sea salt immediately after baking if desired.

For thicker, chewier cookies, chill the dough for at least 30 minutes before baking. Ensure butter is softened but not melted. Do not overbake; cookies continue to cook on the hot pan after removal. Store in an airtight container at room temperature for up to 5 days. To keep soft, place a slice of bread in the container.
