Chewy Double Chocolate Chip Cookies: Best 3-Ingredient Recipe

  • Author: Olivia
  • Total Time: 25 minutes
  • Yield: 12 cookies 1x

Description

A simple, fast, and reliable recipe for chewy double chocolate chip cookies using basic pantry ingredients. These cookies feature a crackly top, soft center, and intense chocolate flavor, ready in under 30 minutes.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 2 tablespoons (10g) unsweetened cocoa powder

Instructions

  1. Melt the butter in a microwave-safe bowl in 30-second intervals, stirring between each, until fully melted. Let it cool for 5 minutes so it is warm but not hot.
  2. In a medium mixing bowl, whisk the melted butter, granulated sugar, egg, and vanilla extract vigorously for about 30 seconds until the mixture is glossy and slightly thick.
  3. Add the flour, baking powder, salt, and cocoa powder to the wet mixture. Fold gently with a spatula until just combined. Do not overmix.
  4. Stir in the chocolate chips, reserving a few for topping. Fold until evenly distributed.
  5. Scoop the dough onto a parchment-lined baking sheet using a small ice cream scoop or two teaspoons. Roll into balls. For extra chew, chill the dough balls in the fridge for 15 minutes (optional).
  6. Preheat oven to 350°F (175°C). Bake the cookies for 10-12 minutes. They should look slightly underbaked in the center but set on the edges.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely. Sprinkle reserved chocolate chips on top while warm.

Notes

Do not overbake; cookies will continue to cook on the hot sheet. Spoon flour into measuring cup and level off for accurate measurement. Dough can be frozen for up to 3 months. Store baked cookies in an airtight container at room temperature for up to 1 week. Do not refrigerate as it will harden the cookies.
