  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch square pan with butter or cooking spray.
  2. In a mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the butter mixture. Mix until just combined.
  4. Add the flour, baking powder, and salt. Stir gently until the flour disappears and the dough is soft and sticky. Do not overmix.
  5. Press the dough evenly into the prepared pan.
  6. In a small bowl, mix the 2 tablespoons of granulated sugar with 1 teaspoon of cinnamon. Sprinkle evenly over the dough and press gently to adhere.
  7. Bake for 20-25 minutes, or until edges are golden brown and the center is just set but still slightly soft.
  8. Let the bars cool in the pan for at least 15 minutes before cutting into squares.

Notes

Softened butter is key for proper creaming. Do not overbake as the bars continue to cook in the hot pan after removal. Cool completely for clean cuts. Store in an airtight container at room temperature for up to 3 days. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with coconut oil.
