Description
Dense, chewy cookies infused with the deep, nutty aroma of browned butter. These cookies feature crisp, caramelized edges and a soft, gooey center, making them the perfect centerpiece for any gathering.
Ingredients
Scale
- 1 cup (226g) unsalted butter
- 1 ½ cups (300g) dark brown sugar, packed
- ½ cup (100g) granulated white sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 ¼ cups (280g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups (340g) semi-sweet chocolate chips
Instructions
- Brown the butter: Cut butter into cubes and melt in a medium saucepan over medium heat. Stir constantly until small brown specks form and the butter smells nutty (5-7 minutes). Remove from heat and pour into a heatproof bowl. Cool for 10-15 minutes until just warm.
- Mix wet ingredients: Whisk the cooled brown butter, brown sugar, and white sugar vigorously for 1-2 minutes until glossy. Add eggs and vanilla extract, whisking until smooth and homogeneous.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Form the dough: Fold the dry ingredients into the wet mixture using a spatula until no streaks of flour remain. Do not overmix. Fold in chocolate chips.
- Chill the dough: Cover the bowl and refrigerate for at least 30 minutes (or up to 24 hours) to firm up the butter and hydrate the flour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough into 2-tablespoon balls and place 2 inches apart on baking sheets.
- Bake for 11-13 minutes until edges are golden brown but centers still look soft.
- Let cookies sit on the hot pan for 5 minutes to set, then transfer to a wire rack to cool completely.
- Sprinkle with flaky sea salt if desired before serving.
Notes
Ensure butter is cooled before mixing with sugar to prevent melting the chocolate chips. Do not skip the chilling step as it prevents spreading and ensures chewiness. Underbake slightly for a chewy center. Store in an airtight container with a piece of bread to maintain softness.
