Description

A quick and easy weeknight dinner that combines shredded rotisserie chicken, green chilies, and creamy soup layered with tortillas and sharp cheddar cheese. It offers the flavor of enchiladas without the hassle of rolling, ready in about 35 minutes.

  • 2 cups shredded rotisserie chicken (about 300g)
  • 1 medium yellow onion, diced (about 150g)
  • 4 cloves garlic, minced
  • 1 can (4oz / 113g) diced or roasted green chilies
  • 1 can (10.5oz / 298g) cream of chicken soup
  • 1/2 cup chopped fresh cilantro (about 15g)
  • 8 large flour tortillas (10-inch)
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 12 jalapeños, sliced (optional)
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Heat oil in a large skillet over medium heat. Sauté diced onion for 2-3 minutes until softened.
  3. Add minced garlic and cook for 1 minute until fragrant, being careful not to brown it.
  4. Reduce heat to low. Stir in green chilies, cream of chicken soup, and chopped cilantro. Mix well.
  5. Add shredded chicken to the skillet and stir to coat evenly. Season with salt and pepper to taste.
  6. Tear 2 tortillas into large pieces and place them on the bottom of the baking dish. Sprinkle half the chicken mixture and half the cheese over the tortillas.
  7. Repeat the layering process: tear up 2 more tortillas, add the remaining chicken mixture, and top with the remaining cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden brown and tortillas are tender.
  9. Remove from oven and let rest for 5 minutes before serving to allow the casserole to set.

Notes

If tortillas are stiff, microwave them for 10-15 seconds wrapped in a damp paper towel to soften. Letting the casserole rest for 5 minutes after baking is crucial to prevent a soupy texture. For a lighter version, substitute Greek yogurt for the cream of chicken soup. This dish does not freeze well due to texture changes in the tortillas and cheese.
