Instructions
- Brown the butter: Melt butter in a heavy-bottomed saucepan over medium heat. Stir constantly until milk solids turn golden brown and smell nutty (5-7 minutes). Pour into a heat-proof bowl and cool for 10-15 minutes.
- Mix wet ingredients: In a large bowl, whisk cooled brown butter, granulated sugar, and brown sugar vigorously for 2 minutes until glossy. Add eggs, egg yolk, and vanilla; whisk until combined.
- Add dry ingredients: In a separate bowl, whisk flour, baking soda, and sea salt. Gently fold dry ingredients into wet ingredients until just combined. Do not overmix.
- Fold in chocolate: Add chocolate chips (and chopped chocolate bar if using) and optional toasted nuts. Fold gently.
- Chill dough: Cover and refrigerate dough for at least 30 minutes or up to 24 hours.
- Preheat oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop and bake: Scoop dough balls onto sheets, spacing 2 inches apart. Bake for 12-14 minutes until edges are golden but centers look slightly soft.
- Cool and top: Let cookies cool on the pan for 5 minutes, then transfer to a wire rack. Sprinkle with flaky sea salt while warm.
