Description
A quick and elegant one-pan weeknight dinner featuring juicy pork chops seared in a skillet and finished with a rich, nutty brown butter sauce infused with crispy sage leaves.

- 4 bone-in pork chops (approx. 1.5 lbs / 680g, 1-inch thick)
- 6 tbsp unsalted butter
- 1 tbsp olive oil
- 12–15 fresh sage leaves
- 2 tbsp all-purpose flour
- 1/2 cup low-sodium chicken broth
- 1 tsp apple cider vinegar or lemon juice
- Kosher salt
- Freshly cracked black pepper
- Red pepper flakes (optional)
Instructions
- Pat pork chops completely dry with paper towels. Season generously with kosher salt and black pepper, then dust lightly with flour, shaking off excess.
- Heat a large skillet (cast iron or heavy stainless steel) over medium-high heat. Add olive oil.
- Sear pork chops for 4-5 minutes on the first side until golden brown. Flip and cook for 3-4 minutes. Remove to a plate and let rest.
- Reduce heat to medium. Add butter to the same skillet. Swirl constantly until milk solids turn deep amber and smell like toasted nuts (2-3 minutes).
- Add sage leaves to the brown butter and cook for 30 seconds until crispy. Remove sage with a slotted spoon and set aside.
- Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
- Stir in apple cider vinegar and taste for seasoning.
- Return pork chops to the skillet, nesting them in the sauce. Spoon brown butter over the top and warm through for 1-2 minutes until internal temperature reaches 145°F (63°C).
- Plate chops, spoon extra sauce over them, and garnish with crispy sage leaves.
Notes
If using frozen pork chops, sear for an extra 2-3 minutes per side and cover with a lid for the last few minutes to steam through. Do not walk away from the butter while browning as it burns quickly. Resting the meat after searing helps redistribute juices. This dish does not freeze well.
